almond crunch (topping)

1/3 cup ground almond
1/3 cup gluten free flour
1/3 cup unsalted butter
1/3 cup granulated sugar

1. Place all the ingredients into a food processor and combine until a dough ball is formed
2. Remove the dough ball and wrap in grease proof paper and place into freezer for an hour or until very firm

short bread:

1 1/2 cups gluten free flour
1/2 cup caster sugar
1/2 cup unsalted butter
2 egg whites

1. Place all the ingredients into a food processor and combine until a ball of dough is formed
2. Remove the dough and wrap in grease proof baking paper and place into fridge for an hour to chill

date toffee:

2 1/2 cups chopped dates
1/3 cup dark brown sugar
1/2 cup water

1. Place all the ingredients into a medium sized pot on a med to high heat
2. Bring to boil, then turn down and allow to simmer until the sugar has dissolved and the mixture is soft and spreadable
3. Remove from heat and leave to one side

Assemble:

1. Remove the chilled short bread dough from the fridge and place between two large sheets of grease proof paper
2. Using a rolling pin to roll out the dough into a rough square to fit a a baking tray (left the baking paper off the dough from time to time to ensure the dough does not stick to the paper)
3. Once rolled to desired shape/size place the dough onto the baking tray lined with fresh grease proof baking paper
4. Place into a warm oven at 180 degrees C for 15-18 min until golden and firm
5. Once baked remove from oven, keeping it in the baking tray
6. Grab your date toffee and spread a generous layer evenly over the short bread (if does not cover the entire short bread, simply just cut away the excess short bread and enjoy on its own!)
7. Remove the the almond ball from the freezer and using a grater, grate the ball of dough over the date toffee, ensuring to cover the entire date toffee with a generous even layer
8. Place back into the warm oven at 180 degrees C for 18-25 min until the almond topping is golden and crunchy
9. Once baked remove from oven and allow to cool before cutting into slices/squares and enjoy
