White Chocolate Cardamon Mousse

White Chocolate Cardamom Mousse

2 cup double cream
10 pods of cardamom (crushed)
1 cup white chocolate

1. Add cream and crushed cardamom to a sauce pan and bring to a boil, then take off heat and allow in infuse for 15 min
2. Melt the white chocolate using the microwave. Break the chocolate into a microwave safe bowl and cook for 1 min on high. Stir the chocolate and place back in for another min, remove and stir the chocolate until completely melted, if the chocolate isn’t melted completely, place back in for another 30 seconds
3. Sift the infused cream into a mixing bowl and leave to cool slightly
4. Remove the skin that forms on the top of the cream and slowly add the cream into the melted chocolate until well combined
5. Pour into individual glasses and allow to cool completely
6. Once completely cooled, place in fridge for 4 hours to set

Garnish with grated white chocolate and lavender
