Gluten Free Apple Cream Cake


Gluten Free Apple Cream Cake
1 ½ cup of crushed gluten free digestive biscuits
½ cup of butter (melted)

1. Place the gluten free digestive biscuits into a food processor and pulse until a the biscuits become bread crumb consistency
2. Add in the melted butter and pulse again until all the biscuit mixture is coated in the butter
3. Spoon the mixture evenly into individual glasses and place to one side

6 apples
¼ cup of caster sugar

1. Cut the apples into ¼ and remove the seeds and stake
2. Cut the 1/4ers length ways to half each ¼ again and then chop the apples up
3. Place into a saucepan and add the sugar and place a lid on top
4. Place on to the cooker on a mid heat to stew the apples ensuring not to allow the apples to burn
5. Once the apples are stewed, take off the heat and allow to completely cool before spooning the stewed apples evenly into the individual glasses

200 ml sour cream
¼ cup soft brown sugar

1. Pour the sour cream into a mixing bowl and beat the soft brown sugar into the cream
2. Once mixed completely spoon evenly on top of the apples
3. Place the glasses into the fridge for 2 hours before serving

To garnish, mix up some soft brown sugar with cinnamon and sprinkle on top of the cream.

      • Hi. So sorry. I’ve been out of action for a few days. The dish was delicious!! The Mammy-in-Law is coeliac and we always do pavlova when she comes over for dins so really looking forward to trying some more of your GF recipes 🙂
