Gluten Free Ginger, Cinnamon, Dark Choc, Rough Chopped Almond Cookies

1 3/4 cups gluten free flour
1/2 tsp baking powder
1/2 cup unsalted butter (softened)
3/4 cup of caster sugar
1 egg
2 tsp vanilla essence
1 tbsp. ground ginger
1 tbsp. ground cinnamon
1/2 cup chocolate chips
1/2 cup rough chopped almonds

Instruction

1. Add the butter and sugar into a large mixing bowl and beat until creamed
2. Once creamed, beat in the egg with the vanilla, ginger and cinnamon
3. Gradually add in the flour and baking powder until completely incorporated
4. Add in the rough chopped almonds and chocolate chips ensuring to mix evenly into the dough
5. Roll out the dough on a floured surface, or you can use two pieces of non stick baking paper (placing the first sheet on the flat surface and then then dough into the centre of it and place the second sheet directly over)
6. Once rolled out, cut cookies out and place onto a baking tray lined with grease proof baking paper
7. Place into a warm oven at 180 degrees C for 8-10 min until light golden
8. Once baked remove from oven and allow to cool on a wire tray
