Bannoffee Pie
Make up short crust pastry for the base and grease the deep dish tray and line with crust. This will be blind baked
(or can be bought premade in a shop (store))

The filling:

1 stick of unsalted butter
½ cup soft dark brown sugar
1 can of condensed milk
3 bananas
1 pint whipped cream
100 grams dark chocolate

Instructions

1. Blind bake the crust and allow to cool
2. Melt butter in a sauce pan on low to medium heat
3. Once melted add in sugar and allow sugar to melt and combine with the butter be careful not to burn
4. Once the sugar has melted add in the condensed milk stirring constantly to combine again insuring not to burn for 5 – 10 min over low to medium heat
5. Once the mixture becomes thickened pour into cooled prepared crust and leave to chill for 1 -2 hours
6. Once chilled chop bananas into coin size shapes and place over the toffee insuring to cover evenly
7. Spread the whipped cream evenly over the bananas
8. Grate the dark chocolate and sprinkle over the cream
