Gluten Free Strawberry and Cream Cookie Stack

Gluten Free Strawberry and Cream Cookie Stack

(Make a batch of the protein short bread ensuring to make an even amount of cookies as you will need two each for the stacks.)

1 container of double cream
1 punnet of strawberries

1. Whip the double cream until stiff but smooth and place to one side
2. Wash and cut the green stem off the strawberries and slice long ways in half
3. Grab your cookies and place on a flat surface, put a tiny bit of cream on the flat end of the halved strawberry and place it flat on to the cookies edge with the flat side facing out, repeat until strawberries form a complete circle on top of the cookie
4. Using a piping bag, pipe cream into the middle of the strawberry circle, trying to fill the gaps between the strawberries too
5. Once filled with cream place the second cookie on top ensuring it is secured with cream under it
6. Repeat this for all the cookies
7. Once complete, dust with icing sugar using a sieve and you can garnish with another halved strawberry sliced to create a fan on top
