Gluten Free Short Bread Protein Cookies

1 1/2 cups gluten free flour
1/2 cup unsalted butter
1/2 cup caster sugar
1 large egg
2 scoops of desired flavoured protein (I used banana cream)


1. Sieve the flour into a large mixing bowl and mix in with the sugar
2. Add in the butter and mix well until a bread crumb texture is formed
3. Add in the protein and mix well
4. Crack the egg into the mixture and combine to create a ball of dough that comes away from the sides of the mixing bowl
5. To roll out the dough place a large piece of grease proof baking paper on a flat surface, place the dough into the middle of it and place another piece of grease proof baking paper the same size on top
6. Using a rolling pin, roll the dough out, remove the top sheet of baking paper and cut out desired shapes using a cookie cutter (with the left over dough just roll it back into a ball and repeat until all the dough is used)
7. Place the cookies onto a baking tray lined with grease proof baking paper (leaving a small gap between each cookie)
8. Place into a warm oven at 180 degrees C for 15-20 min until golden in colour
9. Once baked, remove from oven and place onto wire rack and allow to cool
