Gluten Free Dark Chocolate and Chopped Almond Cookies

1 1/2 cups gluten free flour
1/2 cup unsalted butter
1/2 cup caster sugar
1 large egg
1/2 cup chocolate chips
1/2 cup chopped almonds

Instructions:

1. Sieve the flour into a large mixing bowl and mix in with the sugar
2. Add in the butter and mix well until a bread crumb texture is formed
3. Crack the egg into the mixture and combine to create a ball of dough that comes away from the sides of the mixing bowl
4. Once the dough ball is formed add in the chocolate chips and chopped almonds ensuring to mix completely and evenly
5. To roll out the dough place a large piece of grease proof baking paper on a flat surface, place the dough into the middle of it and place another piece of grease proof baking paper the same size on top
6. Using a rolling pin, roll the dough out, remove the top sheet of baking paper and cut out desired shapes using a cookie cutter (with the left over dough just roll it back into a ball and repeat until all the dough is used)
7. Place the cookies onto a baking tray lined with grease proof baking paper (leaving a small gap between each cookie)
8. Place into a warm oven at 180 degrees C for 15-20 min until golden in colour
9. Once baked, remove from oven and place onto wire rack and allow to cool
