Gluten Free Banana Pancakes

Gluten Free Banana Pancake

2 eggs
1 banana
1 tbsp. ground cinnamon


1. Place 2 eggs and the banana into a food processor and pulse until smooth
2. Have a frying pan on a medium heat and add in some coconut oil to grease the pan
3. Pour the mixture on to the pan to the desired size (I find silver dollar size pancakes easiest)
4. Cook for 2-3 min each side

(if your making a few you can keep the pancakes warm on a plate in a low heated oven until all the pancakes are cooked)

I had mine with turkey bacon and two eggs with honey
