Gluten Free Cranberry, Cinnamon and Protein Cookies

Gluten Free Cranberry, Cinnamon and Vanilla Protein Cookies

3/4 cup caster sugar
3/4 cup soft dark brown sugar
1/2 cup unsalted butter
1 scoop of vanilla protein
2 tbsp. cinnamon
2 eggs
2 1/2 cup gluten free flour
3/4 cup dried cranberries

Instructions

1. Place butter, sugars, protein and cinnamon in a mixing bowl and cream together
2. Beat in eggs until well combined
3. Ass in the flour and mix until completely mixed and well combined
4. Fold in the dried cranberries until evenly mix throughout the batter
5. Using two tbsp. spoon desired size batter onto a baking tray lined with grease proof baking paper leave room between each one to allow the cookie to spread
6. Place into warm oven at 180 degrees C for 15- 18 min until firm but soft to the touch
7. Once baked, remove from oven and allow to cool on baking tray for 2 min and then transfer to wire cooling rack.
