Diabetic Friendly, Gluten Free Almond Balls

1 cup ground almond
1/4 cup xylitol (sugar substitute)
2 egg whites
1 tbsp cinnamon

(you can make these with caster sugar if you do not wish to make them diabetic friendly)

Instructions

1. Place all ingredients into a food processor and pulse until well combined
2. You should be able to form balls the size of gold balls (if the mixture crumbles simply add in more egg white as is needed)
3. Place balls onto a baking sheet lined with grease proof baking paper
4. Place into warm oven at 180 degrees C for 8-10 min until golden in colour
5. Remove once baked and allow to cool

If making the balls with caster sugar, once they cool you can roll the balls in powdered (icing) sugar.

(store in an air tight container)
