Chocolate Coated Hard Caramels

1 cup double cream
5 tbsp unsalted butter (cubed)
1 ½ cup caster sugar
¼ cup golden syrup
¼ cup water
1 cup of dark chocolate chips

1. Melt the butter and cream in a saucepan and leave to one side
2. Melt the sugar, golden syrup and water in a heavy based saucepan on a moderate heat and bring to boil, then lower the heat down and swirl a little until the mixture is completely dissolved and golden in colour
3. Add the melted butter, cream to the mixture and stir constantly until the temp reaches 130 degree C
4. Once temp is reached, pour the mixture into a greased container and allow to completely cool
5. Once completely cool, break into pieces and store in an air tight container
6. Melt the chocolate in a bain-marie and coat the broken pieces in melted chocolate and leave set on greased proof paper.

If you didn’t want to cover them in chocolate you can buy wrappers and wrap them. Place into bags and keep in fridge
